This 63-page guide is a great resource!

Here, you’ll learn gain a useful background on PDF and how the format handles images, vector drawings, fonts, attachments, comments and annotations and multimedia. You’ll also learn about the two types of from technology supported in Acrobat (Acroforms and XML-based forms) and when to use each.

There are examples of clinical use cases and other practical information, too.

There is quite a bit of space devoted to scripting XML-based forms for working with XML datastreams.
