To paint a straight line, hold the shift key while dragging a stroke. Or, click once with a painting tool, then release the mouse, hold the shift key and click again to draw a straight line between the two points.

To maintain more detail when using the Art History Brush, try experimenting with a very small brush. You can also increase/decrease the spacing of the brush (found on the Brushes panel in the Brush Tip Shape area) to produce more interesting effects.
